Park City 2019

Fred and I arrived to the Westgate Resort on Friday evening.
This is the view from our room overlooking the pool.
We were on the 9th floor. 
This time we had a direct route from the parking garage to our room.
That was a positive start to our week.
We had Saturday to ourselves. We did some grocery shopping and when we got back to the resort, they were providing a free BBQ poolside. We were all for that.
Not much later we drove around scouting out a place to eat with Rick and Wendy Cloutier for Sunday. During that time there was a hail storm. It was crazy.
This is the build up on our car windshield.
That evening around dinner time, Shannon and family arrived.
They were staying in the room attached to us so they came early.
They had plans to spend Sunday with Brian's brother in Farmington
The pool was definitely the highlight for everyone!
Sunday morning we also drove around checking out the nearby parks.
Monday morning, poor M woke up with the barfs.
It didn't last long and she was better the rest of the although worn out.
She fell asleep poolside.
Monday everyone else arrived.

Monday night grandpa gave all the big kids battery operated piggy banks.
I think they were all pleased with that.
Here are our two baby cousins. They were so cute together.
Tuesday we went to the nearby park. The weather was good, then cloudy. 
At first the park was not too busy and then a busload of kids came from a nearby school.
Fred brought his usual stash of outdoor doors.
Here are our baby momma's.
Shannon brought a craft project to the park. 
Finger painting picture frames.
Fred does spend time with each grandchild in some way. 
Whether it's helping them with the activity or helping put together something to play with.
Tuesday evening was our night for family pictures.
The weather was cool and overcast.
Perfect for picture taking.
After pictures, Brian started the prep work for his crepe breakfast.
Here he is making the praline sauce.
It was so good!
Wednesday was our day in SLC.
We went to the Clark Planetarium. 
It didn't work out quite as I had pictured it. 
First we ate at a nearby Costa Vida with Corinne and Shannon's family.
Scott and Jess were at the Planetarium because Evan was already invested in that.
Then we switched places and Jess & Scott went to lunch while we wtched Evan & Graham.
The rest of the families checked out the Planetarium.
Shannon & family left to do some of their own activities and Fred and I headed to Temple Square.
A little quiet time back at the resort with the little ones.
Thursday night was chocolate fountain night.
Corinne and Ben host this activity.
Now just some hanging out pictures.
It was nice that each family had their own space. 
The only drawback is there is really no space big enough to comfortably fit all of us.
Great Grandpa came up one day to check in with everyone.
Thursday was a big day.
We had our girls day out. We went shopping at the outlet mall.
Jess and M found matching shirts.
The Daly Hand and Foot game.
I didn't play cards. 
I played with babies.
I can't believe it is over and done with.
It's a lot of work and sacrifice to bring everyone together, but over all I think each family went home with fun memories. 
We want to try renting a VRBO next time somewhere.
A different location would be nice too. 
We shall see.

Almond Roca Tutorial

Creative Circle Almond Roca Night!

Belinda Kortekaas shared her famous recipe with us 
and shared with us the tips to making it ourselves.

Tip #1 Use Costco's salted butter (she said unsalted is also okay)
Tip #2 Freeze the butter

Here is the recipe:
Ingredients:
1 cup sugar
1 cup butter (or 2 sticks)
Almonds (crushed) takes about a bag and a half of the Costco Almond Bags
Now that I think about it, we made four batches that night so you don't need that many almonds if your are making just a single batch.
1 1/2 cups of semi sweet or milk chocolate chips
(or you can use 2 chocolate bars)
Instructions:
Put a splash of crushed almonds in a pan (she used less than 1/2 cup)
Add sugar and butter. 
Cook on stove top on high heat stirring (actually blending with a twist of your wrist)
 regularly until mixture becomes the color of peanut butter. 
NEVER LEAVE YOUR PAN!
If the mixture gets too separated, add a little bit of water.
  


  Here the mixture has reached the color of peanut butter.


Spread foil on a cookie sheet. 
Spread the mixture thin or spread thick if that's how you like it, onto the foil.
Sprinkle your chocolate over the mixture and spread with the backside of a big spoon. 

 Cover the mixture with crushed almonds.
 Lightly pat/press the almonds down with a baggie.
Cool in the refrigerator and when it's ready, peel and break it off of the foil.
She placed fairly big chunks into a bowl and then pressed down to make smaller pieces.
